What OS will be able to read the drive if I just pulled it out of the box? Will any distro of Linux be able to read the files? What if I wanted to read the files from a Windows box?

You can use EXT2IFS http://www.fs-driver.org/index.html to read from a windows box.
You could also use Knoppix live CD but i haven't tried it myself.

download Knoppix (or Kanotix is actually my fav)

Boot the CD which will take you into Linux without altering your system in any way.

On the desktop you will see some icons from drives.

Double click them and one will be your NASlite data.
