As far as iTunes you have now found one of the biggest annoyances. Inability to sync the libraries. As much as Apple brags about the ability to keep all macs in sync it does not work well with iTunes and iPhoto. As Tony said, each mac will have a copy of the library database locally and point to the files on the NAS. When you make a change on one mac, only that library is updated so the other macs will not see the change. There is software called SuperSync and Tune Ranger which does what you want but I will say it is no the easiest to use. I use Supersync and still don't quite have it figured out.

I am currently using Itunes spread across multiple clients with the database (Library) and the Itunes Music folder both stored on the NASLite shared disk.. I would hapily tell you how I am doing it feel free to pm or email me (the_riddlr@hotmail.com). It's not to hard to do but a lot to go into on the forums.
